I love making Freddie (and I!) yummy snacks and I’m always trying new things. I thought I’d share with you our latest invention.
What you’ll need:
2 sheets of filo pastry
8 slices of mozzarella (or more if you like)
A handful of olives
A handful of parsley
2 tablespoons of tomato puree
A handful of cheddar cheese
First of all you will need to layer out the 2 pieces of filo pastry on top of each other. You will need to whisk the egg and then use a pastry brush to then cover the filo in a thin layer of egg.
Next, you will need to cover the pastry in tomato puree. It’s entirely up to you on how much you use, it’s personal preference.
Then you can sprinkle the parsley evenly.
After that you can place the mozzarella and olives evenly over the pastry. Again, how much you use is down to personal preference and you can even add a few ingredients too.
Finally, roll it all up like a swiss roll and apply another egg wash and sprinkle with cheese. Bake in the oven for 10-15 minutes.
Once they’re cooked and cooled down you can cut them into pieces and enjoy!
